Sweet Tomatoes Ginger Broth

On a business trip once upon a time, I ended up in a hotel next to a Sweet Tomatoes. After a long day of working, I wandered over for a quick bite and was immediately curious about this broth soup. Upon tasting it, I was in love. It's very light, but full of wonderful flavor. Sadly, Sweet Tomatoes and Soup Plantation are no longer around, but they shared their wonderful recipes with us all before they left. Here is the Asian Ginger Broth, not edited or modified by me in any way:

Ingredients:

  • Finely Minced Ginger | 4 tablespoons
  • Finely Minced Garlic | 3 tablespoons
  • Canola Oil | 2 tablespoons
  • Cornstarch | 6 tablespoons
  • Cold Water | 2 cups
  • Water | 14 cups
  • Vegetarian Base | 6 tablespoons (found in the grocery soup aisle near bouillon)

Directions:

  • Combine ginger, garlic and oil in a large pot and sauté for 5 minutes. Add cornstarch and 2 cups cold water to pot and whisk to dissolve.
  • Add rest of water and vegetarian base to pot and bring to a boil. Simmer for 15 minutes. Season to taste with salt and pepper.
  • Garnish with any combination of the following items: sliced green onions, shredded carrots, chopped spinach, sliced mushrooms, wonton strips, cubed tofu
