I was in need of a fairly-simple, very yummy, bulk recipe to feed a lot of people and a version of this came across my feed. Almost tastes like Smoked BBQ pulled pork, but requires quite a bit less effort.
Serving suggestions: This can be served as sliders or on baked potatoes or even just by itself. Pair this with the Quick Pickled Onions recipe with some cheddar cheese and BBQ sauce for an easy crowd pleaser.
Ingredients:
Boneless pork shoulder (or butt) | 3 pounds
Sea Salt | 1 tablespoon
Garlic Powder | 1 - 2 tablespoons
Paprika | 1 tablespoon
Black Pepper | 1 tablespoon
Liquid Smoke | 1/2 tablespoon
Bacon | 1 pound package
White Cheddar Cheese Slices | 1 Package
BBQ sauce (I like Carolina vinegar style)

Preparation:
Cut the pork into portions 2 - 3 inches in size. Use this opportunity to remove any large pieces of fat, gristle or bone.
Place the pork into a large bowl. Add salt, garlic powder, paprika and liquid smoke. Mix to coat all pieces as evenly as you can.
Wrap bacon strips around a few chunks of pork, can use multiple pieces of pork or multiple pieces of bacon. To be honest, this is where "wrapped" comes from in the title and it sounds good, but you can also just chop the bacon up and mov it in as well.
Place the pork into the slow-cooker or crock-pot for 6 hours on low.
When the pork is "pullable", shred it all and remove any additional chunks of fat that may have showed up. Try to get it all into a consistent siz
Preheat your oven to broil - high.
Arrange pulled-pork into a single layer on a baking sheet (cover in foil if you don't like doing dishes). I like to keep it fairly loose so that you get more of it crispy. The tighter you pack it, the more moist it will stay.
Place the baking sheet in the preheated oven near the top. This step only takes a few minutes, but keep an eye on the pork as it can burn very quickly. Once it reaches a desired level of crispiness, pull from the oven.
Serve the pork with tongs and place on your favorite bun or baked potato or just pulled pork by itself! Even better the following day.
